Prepare ingredients
Peel yam and cut into rolling chunks, soak in salted water to prevent oxidation and darkening. Peel and cut carrot into pieces, cut corn into sections, slice ginger, and cut green onions into sections.
Stir-fry pork ribs
Add a little oil to the wok, sauté ginger slices until fragrant, then add pork rib pieces and stir-fry over low heat until surface is slightly yellow. Add cooking wine to remove fishy smell and enhance aroma.
Simmer soup base
Add sufficient boiling water (to cover pork ribs), bring to a boil over high heat, then reduce to low heat and skim off surface foam. Cover with lid and simmer over low heat for 1 hour.
Add vegetables
Add carrot pieces and corn sections, continue simmering for 20 minutes. Then add yam chunks and goji berries, simmer for another 15 minutes until yam is soft.
Season and serve
Season with appropriate amount of salt and white pepper, sprinkle with green onion sections before serving. The soup has clear color, delicious taste, and rich nutrition.
💡Making Tips
- •Wear gloves when handling yam, as the yam's sticky sap can cause skin itching. Cut yam should be soaked in salted water to prevent darkening.
- •Rinse pork ribs with warm water after blanching, as cold water will make the meat tough and dry.
- •Use low heat for slow simmering to ensure pork ribs become tender and the broth becomes more flavorful.
- •Don't cook yam for too long, add it during the last 15-20 minutes to maintain proper shape and texture.
