Soak white fungus

Soak white fungus in warm water for 2-3 hours in advance until fully expanded. Remove the hard stem at the base and tear into small pieces. Ensure sufficient soaking time as this makes the white fungus release more gelatin and results in a smoother texture.

Prepare other ingredients

Wash red dates and remove pits, soak lotus seeds in advance and remove the green embryo, shell longan, wash goji berries. If using lily bulbs, they also need to be soaked in advance. Pitted red dates are less heat-inducing and have better texture.

Cook white fungus

Place white fungus in a pot, add sufficient water to cover, bring to a boil over high heat then reduce to low heat and simmer for 1 hour. Simmer until the white fungus is soft and the soup begins to thicken with a gelatinous texture.

Add red dates and lotus seeds

Add red dates and lotus seeds, continue simmering over low heat for 30 minutes. Lotus seeds take longer to cook soft. Stir occasionally during cooking to prevent sticking to the bottom.

Add longan and lily bulbs

Add longan and lily bulbs (if using), continue simmering for 20 minutes until all ingredients are soft and tender. At this point, the soup should be very thick.

Season and finish

Finally add goji berries and rock sugar, stir until completely dissolved. Cook for another 5 minutes then turn off heat. Can be served hot or chilled after refrigeration - each has its own unique flavor.
