Prepare radish

Select fresh, firm white radishes, wash and peel. Cut the radish into 1cm thick round slices, then cut into long strips of uniform size. Mix the cut radish strips with 50g of salt, let marinate for 2 hours to release water. Then squeeze out moisture and place in a ventilated area to air-dry for 1-2 days until semi-dry.

Prepare ingredients

Wash red chilies and cut into sections, slice ginger, crush garlic cloves. Ensure all ingredients are clean and free from raw water. If you like spicy food, keep the chili seeds; for a milder taste, remove seeds and inner membranes. The amount of ingredients can be adjusted according to personal preference.

Make pickling sauce

In a pot, add light soy sauce, aromatic vinegar, and cooking wine, add white sugar, Sichuan peppercorns, star anise and remaining salt, bring to boil over high heat then reduce to low heat and cook for 5 minutes to allow the spices to fully release their flavors. Let cool before use. The sweet and sour balance of the pickling sauce can be adjusted according to personal preference.

Pack for pickling

Prepare clean pickling containers, first sterilize with boiling water or alcohol. Place the dried radish strips, red chili sections, ginger slices, and garlic cloves in the container in layers, arranging them neatly. Gently press with sterilized chopsticks to reduce air contact.

Pour pickling sauce

Pour the cooled pickling sauce into the container, ensuring all dried radish strips are submerged. Sprinkle a little sesame oil on top for aroma and preservation. Seal the container and place in a cool, ventilated area to pickle. Choose sealable glass jars or ceramic containers, avoid using metal containers.

Fermentation complete

Ready to eat after 3-5 days of pickling at room temperature, shaking the container daily to distribute flavors evenly. The finished pickled radish dried has a golden color, crisp texture, and balanced sweet and sour flavor. Use clean chopsticks when serving to avoid contamination. Can be refrigerated for up to 1 month, with flavors becoming richer over time.
