Prepare bamboo shoots
Peel fresh tender bamboo shoots, cut off the tough root, keeping only the tender shoot parts. Cut into 5cm sections, then slice into finger-thick strips. Boil bamboo shoots in water for 3-5 minutes to remove bitterness. Remove and rinse with cold water, drain well and set aside.
Prepare ingredients
Slice Thai chilies into rings, julienne ginger, slice garlic. Keep prepared ingredients separate; adjust the amount of Thai chilies according to personal spice preference.
Layer in jar
Prepare a clean jar and layer the garlic, Thai chilies, and bamboo shoots in three separate layers - bottom, middle, and top.
Pickle and ferment
In a clean bowl, add 3 spoons of salt and 3 spoons of sugar. Pour freshly boiled water and stir until salt and sugar dissolve completely. After the water cools, add white vinegar and mix well. Pour into the jar until bamboo shoots are submerged, cover with lid and refrigerate for about 2-3 days until ready to serve.
