Baked egg milk is a classic Hong Kong dessert, beloved for its smooth texture and rich milky flavor. This dessert is simple to make with common ingredients, yet it creates restaurant-quality deliciousness. Prepare ingredients

Separate the egg whites and yolks of 4 eggs. Prepare 4 small baking dishes or heatproof bowls, grease the inner surface with a thin layer of butter to prevent sticking. Preheat oven to 150°C.

Make egg milk mixture

Beat egg yolks with 20g of sugar until color lightens. Heat milk until warm, slowly pour into egg yolks while stirring. Add heavy cream and vanilla extract and mix well.

Whip egg whites

Add a few drops of lemon juice to egg whites (optional), beat with electric mixer until foamy. Add remaining 30g of sugar in batches, beat to soft peak stage (forms a hook when lifted).

Mix egg milk mixture

Take 1/3 of meringue and fold into egg yolk mixture, then pour back into remaining meringue, gently fold until combined. Strain the mixed egg milk mixture for finer texture.

Pour into baking dishes

Pour the egg milk mixture evenly into prepared baking dishes, about 80% full. Gently tap the baking dishes to remove surface bubbles.

Water bath baking

Add hot water to baking pan (about 2cm deep), place baking dishes inside. Bake at 150°C for 30-40 minutes, until surface is set and center slightly wobbles. Remove and dust with powdered sugar and cinnamon powder.
